Makes: Approx 2 qts.
6 tea bag or 6 teaspoons of loose tea (your favorite black tea)
3-6 sprigs of your favorite mint
2 ¼ cups boiling water
1 pinch of baking soda
6 cups cold water
½ - ¾ cups sugar
Bring water to boil. In mean time place tea and mint sprigs in a wide container. If using loose tea this will allow the tea leaves to open completely.
Pour boiling water over tea and mint. Allow to steep for 10 minutes. During this 10 minutes add the pinch of baking soda. The baking soda serves two purposes: One it keeps the tea from getting cloudy and two it eliminates the bitterness of the tea.
Strain or remove the tea bags and pour into a 2qt container. Be sure not to squeeze the tea bags. Stir in the sugar. Add the cold water and mix.
Chill and serve with lemon wedges.
